nWhat is cake? Well, it’s a dessert that is baked, and in it’s oldest forms it’s a variation of bread.

nBut I eat a lot of sweet breads – like banana bread, cinnamon swirl raisin bread, lemon pecan loaf (yum!) – that I never think of calling “cake.” I think it may be a semantics thing. If I think about lemon pecan loaf, it IS sort of like fruitcake (but a delicious and soft fruitcake, not the disgusting and hard kind!). And if banana bread or cinnamon raisin bread were cooked in a circular form instead of in a loaf pan, it would probably seem just like a kind of cake – right?

nThe truth is, the word “cake” can be used for very simple desserts as well as elaborate, super sophisticated, or highly decorated desserts.
n

n
nGenerally, cake has flour, sugar, eggs, butter or oil, and baking powder or baking soda.
n
n
n
nIt usually has flavorings such as lemon extract, vanilla, or cocoa powder.
n
n
n
nIt sometimes has additions of fruit or nuts in the batter.
n
n
n
nIt sometimes is covered with a glaze or frosting. Often it is stacked up in layers, sometimes with yummy fillings between the layers.
n
n
n
nAnd sometimes it is decorated – with anything from a birthday girl’s name and candles to gorgeous sugar flowers, from amazing candy explosions to complex pictures reflecting a party theme.
