us, she never put flaked fish in
the jello!

  • Despiten the fact that gelatin packages and recipes direct us to stir in hotn water until the gelatin dissolves, and later tell us to chill then dish until the gelatin is solid, in actual fact, gelatin particlesn DON’T dissolve, and gelatin NEVER gets solid!

nThensugar in a Jell-o package does dissolve in water, but the gelatinnparticles are suspended in the water/sugar solution. When it isn“set,”   gelatin becomes a semi-solid—or, more properly, ansemi-solid colloid. n

nAfternthe horror of seeing a fish-shaped mold of flaked-fish Jell-o, youndeserve some Jell-o recipes that are actual treats!

nPretzelnCrush Jell-o

n2½ncups crushed pretzels

n1ncup melted butter n

n8noz. cream cheese, softened

n1ncup sugar

n

n8noz. Cool Whip

n2ncups pineapple juice

n6noz. raspberry or strawberry Jell-o

n2npkgs. Frozen raspberries or strawberries

nCombinenpretzels and melted butter. Press into 9 x 13-inch pan. Bake at 400ndegrees for 12 minutes, and then cool completely.

nCombinencream cheese and sugar. Fold in Cool Whip. Spread over the cooledncrust.

nBoilnpineapple juice. Stir the jello into the juice until “dissolved.”nAdd the frozen fruit to cool the jello. Pour over the cream cheesenlayer, cover with plastic wrap, and refrigerate. n
