Bean Jahni soup – Albanian cuisine

Preparation Time: 35 minutes (canned beans) or 2 hours (dry)
Ingredients:
- 2 cups of white beans (dry or canned)
- 1 chopped onion
- 1/3 cup olive oil
- 3 tablespoons tomato sauce
- 2 tablespoons chopped parsley
- salt to taste
- chili powder to taste
Directions:
- If you are using canned beans, skip this step. Boil your beans in hot water for 5 minutes. Rinse and boil for another 20 minutes
- Saute onions in olive oil until caramelized. Add parsley, chili powder and the water from the canned beans (if you cooked beans, use two spoons of bean stock). Cook for ten minutes
- Add everything, including the beans in a pot and allow it to simmer for 1 hours
