nIndiannpudding is not like Cream of Wheat. But some people call Indiannpudding “hasty pudding,” nonetheless. n

nWhennBritish people first began to settle in North America, they learnednfrom the Native Americans how to grow corn, and how to grind it intoncornmeal – something that the colonists sometimes called “Indiannmeal.”

nSo when the New England colonists made hasty pudding, theynsubstituted cornmeal for the wheat flour. n

nHastynpudding, New England style, was often called Indian pudding. Thendesert developed with the availability of sweeteners and spices, andnthe version we generally enjoy today consists of cornmeal boiled innmilk and stirred until it has thickened. It is flavored withnmolasses, cinnamon, nutmeg, and eggs, and then it is baked so that itnwill have a smooth, silky texture.
